Simple and easy Fish with Salad

Preparation: 5 minutes

Serves: 1-2 people

 

Ingredients:

  • 2 x White flesh fish fillets
  • 1/2 x Cucumber (diced or chopped to your liking for the salad)
  • 1- 2  x cups of mixed leaves 
  • 1/2 x handful mushrooms (diced or chopped to your liking for the salad)
  • 1 x cup cherry tomatoes (chopped in half)
  • Just a few fresh herbs (mint/continental parsley)
  • Salt and pepper
  • IF serving more than 1 person, just increase salad ingredients
     

 

Preparation

  • Heat fry pan to medium and splash a drizzle of olive oil in base of pan
  • Season Fish Fillets with a little bit of salt and pepper
  • Place fish in pan and cook for approximately 2 min per side making sure cooked through (when cooked allow to rest)
  • Add salad ingredients to a bowl and toss
  • Put salad on a plate, place fish on top and enjoy!

Tips

  • Quick prep time & quick cooking time! (So we are saying this is an easy and achievable recipe to do, in particular if time poor).
  • If you don't want to use olive oil, use coconut spray/oil
  • Can serve with wedge of  lemon
