Versatile Bake


Serves: 4


  • 1 x tablespoon of oil
  • 2-4 x cloves of fresh garlic crushed
  • 400g chicken breat chopped
  • 320g raw lentils rinsed and drained
  • 2 x tablespoon lemon tyme
  • 1 x tablespoon rosemary
  • 2 x cups of salt reduced chicken stock
  • 1 x cup basil leaves
  • 1/4 x cup parsley

The Mash 

  • 300g broccoli
  • 300g sweet potato
  • 2x tablespoons of chives
  • 1x tablespoon of butter


Heat oil in a fry pan,

Add chicken and garlic,

Add stock, lentils, tyme & rosemary for 10min, then remove from heat & add basil & parsley.

Heat up a saucepan of water and boil sweet potato for 10 min then add a steam basket and steam the broccoli for a further 10 min

Put boiled sweet potato and broccoli into a baking dish, add butter and chives and proceed to mash

Then add your chicken, garlic and stock mix to the baking dish and mix in

Pre heat oven grill to high, cook under for 5-10min (you can grate cheese on top too!)

Rest for 5min then serve


You can add more garlic if you wish and even consider chilli!

Mash can be any veg: cauliflower, potato, kale, zucchini & carrot

Remember to freeze the leftovers for another handy and healthy meal
