Tofu Stir fry

Preparation 10min  

Serves 4 people (you can also freeze extras for later) 



● 1x zucchini

● 1x small red onion diced

● 2-3 crushed garlic cloves

● ½ red capsicum

● 1x cup mushrooms

● 2x small bok choy

● 1x bunch broccolini

● Handful chopped snow peas

● 1x packet flavoured tofu

● Salt and Pepper

● Coconut Oil


1. Heat wok up on high with a drizzle of coconut oil

2. Add garlic and red onion

3. Slice tofu and leave to side for now

4. Turn wok to medium heat now

5. Add zucchini, broccolini and capsicum, constantly toss through everything

6. Add the rest of ingredients - leave the bok choy to last

7. Serve vegetables to one side once cooked but still crunchy

8. Add a drizzle of coconut oil and add tofu

9. Tossing for 2-3min

10. Add tofu to vegetables and serve

11. Add salt and pepper to taste


Put some aside in an airtight container for lunch the next day or freeze for a serve of veggies on one of those busy days!
